FISH MOLLIE

Mild, creamy and heartwarming is what comes to mind when I think of
fish Mollie. Story goes that it was created to suit the less spicy taste of the Europeans during their reign in Kerala. My version of it is very simple-full of flavor and anyone can easily make it.


 To start with,
1) Marinate 6pieces of boneless fish cut into halves for 30-45 min.I used boneless Tilapia this time .if bone and skin on-use 3 medium size fish cut into halfs. ( I prefer the bone in)
-one spoon Turmeric powder
-one spoon crushed pepper
-one spoon crushed ginger
-few curry leaves(optional)
-one- two spoons coconut oil
-salt 


2)Fry the fish pieces on high flame in canola oil or coconut oil until half cooked and slightly brown on the outside.Keep aside.


3)In a another pan-in some coconut oil-saute
-one onion
-one spoon of ginger cut in to matchsticks
-2-3green chillis slit open
once its all slightly roasted add in
-one spoon of coriander powder
-one teaspoon turmeric
-one teaspoon pepper powder
-3 tomatoes cut in to quarters
saute till it all comes together-most of the tomatoes must hold its shape.

4)Add in one and a half cup of medium thick coconut milk and few torn curry leaves and let it bubble.(I used coconut milk powder available in Indian stores-you can use pure pressed coconut milk or canned coconut milk)

5)Add in the fish pieces into the bubbling concoction..cover and cook for nearly 5 minutes till the flavors intermingle.

  
6)Add in one cup of thick coconut milk and remove from heat as soon as its lightly heated and add salt as needed.

Serve it with parrotta,Chapatti,Appam,Rice,naan or even flour tortilla.

This dish is magic with simple flavorful ingredients like coconut milk which gives the creaminess ,tomato-sour, green chilli ,ginger, pepper-heat and ofcourse-coconut oil,curry leaves, coriander powder -the unique combination of flavors that cannot be replaced.




Caramel bread pudding


Inspired by Nigella,this bread pudding is so simple that u can make it with ingredients always present at home.A great way to use left over bread too.Its simple,Heartwarming and delicious.

1)Apply butter on 10 bread slices,make pairs and cut into triangles.Arrange it on a baking tray and keep aside.(you can remove the crust if you don't like it,i enjoy the crunch it gives)

2)Next take a pan,
-pour one fourth cup of water 
-and half a cup of sugar.
Let it bubble and get caramelized,into a light brown syrup.(Its important not to stir when the sugar is melting.)

3)Once it is caramelized, immediately remove from heat and
- Whisk in two cups of milk really fast 
(if u want it more creamy add in one cup of milk and one cup of double cream)
-and 3 eggs lightly beaten in a bowl

4)Put back on the heat and stir till the sugar is completely dissolved.

5)Now pour this hot custard mixture on the arranged bread so that it is completely soaked.

6)Bake in  a 325 degree F or 180 degree C oven for 20 minutes or until golden brown.

7)Sprinkle with almonds or any nut or even chocolate chips (Optional)

Serve it hot or cold as it is or with fresh cream ...slurp;)!

Spagetti in mushroom sauce


Its true that traditionally spaghetti is served with meat and tomato dishes.But since my hubby likes spaghetti the most,i try to make it in different ways.This one is so simple and basic,yet creamy and full of flavor.

1)Boil a hand full of  spaghetti,in salted water for 5-7 minutes.Drain and keep aside.
2)Saute
- 3 big cloves of minced garlic in olive oil as it sizzles,
3)Immediately add in 
-two cups of diced button mushrooms marinated with juice of half a lemon.(i like to prepare the mushrooms by removing the stalk and cleaning it well.)
4)Let it cook well letting out all its juices and as it dries out 
5)Add in 
-a bunch of fresh chopped parsley or a spoon of dried parsley.
6)Add in
- two cups of milk 
7)As it bubbles
-add in a cup of sharp cheddar cheese or Parmesan cheese.
8)The sauce will thicken now,Adjust the salt and pepper as required and 
9)Mix in the pasta well.
Serve :) Buon Appetito!!



Sweet-chilli pork


This sweet,spicy and tangy pork strips are really mouthwatering and worth the effort.It definitely satisfies all your taste senses.It looks much better in real than the picture that was taken in a hurry;)

To start with 
1)cut thin slices of pork(chicken works well too) into strips(two cups)
 and marinate for half an hour in a mixture of
-one spoon rice wine vinegar
-1/4th cup Soysauce
-one teaspoon onion powder
-salt and pepper.

2)Mix in two spoons of cornflour to form a pasty batter and deep fry until cooked and light brown in a medium to low flame.

3)Next step is to make the sauce.
-fry 4 stalks of diced spring onion
-one spoon of ginger-garlic paste
-one spoon of Kashmiri chilli powder
.(this is the secret ingredient that gives the golden red colour and makes it unique and not very spicy)
-half a cup of tomato ketchup
-1/4the cup of soy sauce.
-One spoon of redwine vinegar.(ricewine vinegar is good too)
-one spoon of brown sugar(honey works well too)
-1/4th cup of water.
Taste and adjust salt as needed.

4)Once the sauce is bubbling and combined together,stir in the fried meat to coat it
If u need it crispy, remove it immediately from heat and serve as soon as possible.
Its yummy without the crisp too:). 
Garnish with spring onion to bring out the golden colour,and Enjoy!!

Lemony buttermilk pound cake

Lemony Buttermilk pound cake. 
This cake is so moist and refreshing that it brightens up any day. The lemon peel in it adds a jolt of flavor that feels good even after a heavy meal.   
To make the cake,
1) mix together the dry ingredients ie 
-one cup of flour 
-one teaspoon of baking powder
-half teaspoon of salt
2) in a separate bowl beat 
- half a cup of butter, 
- beat in half a cup of sugar. 
You can add one cup if u like the cake to be really sweet.
- Two eggs
3) now add in the flour mixture with
-half a cup of butter millk
- one spoon of grated lemon peel and 
-two drops of vanilla essence.
You can also add teaspoon of lemon juice if you like it more lemonly.
4) bake in a 325 degree Fahrenheit -preheated oven for 45 minutes till golden brown on top.

I like it plain . It's more tangy if you drizzle some icing made with 3 spoons of sugar and one lemon juice heated and drizzled over.
It's a must try, flexible recipie that cannot go wrong.
Moist, fluffy, full of flavor... Perfect for any occasion!!!

Egg puffs .

EGG PUFFS; Spicy-Kerala Style!!!



It never occurred to me that i can make puffs at home !!!
I ended up making egg puffs which my hubby cant resist :) Its indeed a taste of home which we all love! Its quite simple to make with the store bought puff pasty.


1) I used the Pepperridge farm puff pastry sheets.Cut one pastry sheet into 4 squares each.

2) Boil 4 eggs, peel and cut into halves.

3) Put half of a boiled egg facing up and a spoon of onion mixture on top of it.
You dont need too much masala in each parcel.A lil bit with the egg tastes better, Or else it might end up like egg curry in parcels.


a) For the masala- Saute
- one finely chopped big red onion
- a teaspoon of fresh ginger paste
- half teaspoon of Tumeric powder
-one teaspoon of Coriander powder
-one teaspoon of Ground fennel seed
-One green chilly -chopped( optional)
-one spoon water
-salt and pepper


4) Fold the pastry into desired shape and transfer it to a baking tray lined with foil.
I used a Tin foil Baking tray.


5)Brush egg wash -(egg white and a teaspoon of milk or water beaten together) on the parcels.

6)Bake in 400 degree F or 200 degree Celsius oven for 20 minutes or till golden brown.

Let it cool thoroughly, before you bite into those flaky,spicy, crunchy, homemade, EGG PUFFS !!! ;-)

Chicken fried rice


CHICKEN FRIED RICE



This is my version of Chicken Fried rice :-) I must say it is Instant and easy Fried rice.Most of the ingredients are always there at home.
To start with
1) Saute
-Two springs of green onion or spring onion
-One spoon of minced ginger and garlic
-one cup of finely chopped carrot and cabbage
-one cup of shredded chicken pieces (I poached chicken in some water , I also use chicken stock sometimes )
-salt and pepper
-one spoon of soy sauce
-one pinch of onion powder(optional)

2) Stir fry this mixture together for few minutes and add in
-One and a half cup of boiled white rice.
(I used basmathi long grain rice-soaked it for 10 minutes and boiled it in water for 10 minutes and drained it)U can also use left over rice.
-Mix the rice with the sauteed mixture.

3) Now comes my secret part;) add in
- two spoons of chicken stock(i used the stock i boiled the chicken in)
-stir fry and add in one egg and mix all together.add in some more salt according to taste.
- when you serve,cut in a spring onion on top to garnish.

This might not be very authentic but it tastes so good that, you will be making it again and again, like I do:-)
It's a meal on its own and is great with tomato sauce!!

Chicken Biriyani



There are many ways to make biriyani and this is my favorite method!!
I've made this chicken biriyani many times and it's always been a heart warming meal with the eggs, raitha and Pappad.
This picture was taken when I cooked for my best friend in Shillong who came over for lunch and being the hungry foodies that we are had no patience to click a perfect picture of the mouthwatering meal ;)

With a little prep ahead this meal will come out beautifully.To start with..
1) soak 2 cups of long grain basmati rice in water for 15-20 minutes . Drain and keep aside.

2) sauté in one spoon of hot ghee
-one whole cinnamon stick
- two cardomom pods
-3 cloves
- 4 whole black pepper cones
- one- two dried bay leaf
- one star anise
- one skin dried inner skin of nutmeg.
To the roasted spices add in the drained rice sauté for 2 minutes and keep aside.

3) In one spoon of ghee sauté a handful of cashews and once that sizzles and in a handful of raisins. Sauté till the raisins get puffed up. Keep aside for garnish .

4) sauté 
-4-5 finely diced red onions till light golden and keep aside half of it for garnish and to the rest of the onions in the pan,
In low heat, Add in
- a spoon of ginger garlic paste
- one teaspoon of turmeric powder
- one teaspoon of coriander powder
- one teaspoon of Kashmiri chilli powder
- one teaspoon of garam masala.
- salt and pepper .saute together and
- add puréed or finely diced two tomatoes..
-let everything come together, sauté in medium heat till oil seperates.
- add in half kg or 2 cups of chicken with bone.(medium sized.)
- mix together and cover and cook for 10 minutes till the chicken is half cooked and juices have come out.
- At this stage, add in 3 and a half cup of chicken stock to the chicken, let it boil,check salt.
- now add in the roasted rice to it.
-cover tightly and cook for 15-20 minutes..in medium heat. It's good to check after 15 minutes. And lower the heat if needed.
- remove from heat , let is rest for 10- 15 more minutes.

5) In that time frame boil 2-3 eggs , peel and slice into halves .

6) to make the raita mix curd with some water to a paste like consistency.
- add in 2 diced green chillis
- one diced tomato 
- one red onion
- one grated carrot and a bunch of fresh coriander leaves- (optional)
- salt and pepper.

garnish the fragrant rice with the fried onions, roasted cashews and sultanas ,(fresh coriander leaves optional) eggs and serve with the raitha and Pappad and pickle.. Yummmm..:-)


Avocado Smoothie


Avocado Smoothie 



Avocado is such a wonder fruit..used in so many ways..one of my favorites!!!
Ive never seen such luscious creamy green in any other fruit.This smoothie is definitely a soul food.
Everytime i buy avacadoes,i make sure it is not too firm.It doesn't matter if the skin looks lil dark not too ripe though.To make this smoothie-

1) Cut the avacado in half,scoring on the flesh on top of the seed in the middle.split open,discard the seed and scoop out the flesh. Discard the skin.

2)In to a blender add one
-Avacardo flesh,
-Two cups of cold milk( if you are lactose intolerant you can try almond milk and even coconut milk works well)
-Half a cup of honey and blend.

3)When you serve it sprinkle some roasted almonds and drizzle some extra honey on top.I like to make this in bulk and store it in the freezer,and indulge like icecream later;)

What more can you ask for..its Simple,healthy,and pretty :-)

Churro balls with blueberry sauce.


This is my reinvented version of the Classic Churros with chocolate sauce...its soo easy but the end result looks suprisingly exotic!
All you need to do is,
-mix one cup of water with the satlted butter in a saucepan and boil over high heat.
-Stir in the flour slowly in low heat till it forms a ball.It might take a minute or two.
-Remove from the heat and slowly beat in two eggs.This is the Churros dough.Spoon this mixture into a pipping bag and drop it into hot oil and fry till golden.

-Here's my twist! Instead of the cinnamon and sugar coating i have used cardamom and light brown sugar.Coat it soon after frying.

-For the Blueberry sauce- Heat the blueberries with brown sugar and butter...Serve!






Meatloaf with mushroom sauce!

This meatloaf is to die for! Seriously!Ofcourse with a spicy,Indian twist... 
All you have to do is 

1)Mix half cup minced beef,one pork sausage.

2) To that add the stirfried veggies.....ie 
-one carrot,
-few spinach leaves,
-one onion,
-one clove of garlic, 
-salt , pepper,
-a teaspoon garam masala, 
-a teaspoon paprika or kashmiri chilli powder stir fried together

3)Add in one egg and bread crumbs to the meat mixture.

4) Mix all together,form a loaf shape in a baking tray and bake in a high oven for 45 minutes.

The sauce makes it unique..and irresistible .The base is bechamel sauce or white sauce with mushrooms. 

1)Cook the mushroom with 
-onion, 
-butter,
-salt and pepper till the water from the mushrooms are reduced, 

2)In a separate pan add in
- a spoon of all purpose flour
- a spoon of butter once thats cooked for 3 minutes on low heat,
-add in half a cup of water and the mushroom sauce.

This is definitely a crowd pleaser! Must Try!

Chocolate- coffee brownie

 Chocolate Coffee cake!!


This brownie literally melts in the mouth! and the best part is its healthier than the normal brownies..i guess;)
 coz all it has is 
-one spoon of all purpose flour with a cup of ground almonds.
-a teaspoon of baking powder 
-a cup of light brown sugar, 
-1 spoon of coca powder
-one teaspoon of instant coffee.
- half a cup of butter
-one egg.
 All whisked together into a magical concoction and baked in 300 degree F or 150 degree C, preheated oven for 20 or 30 minutes. 

The icing is even more lovely..
In a sauce pan
-Add a cube of butter, 
- two spoons of brown sugar,
-half a teaspoon of instant coffee
- half a cup of chocolate 
- half a cup of milk.
stirr until bubbling and gooey.
It will thicken as it cools.spread the icing on the cake once the cake has cooled.
.yummmm :)!




2 )Homemade pizza-lasagna


This is amazingly simple..all you need is
1)a french bread or Baguette cut into halves,toasted on a pan or oven ,
2)topped with a spread of
-one egg,
-salt ,
-pepper,
-cream cheese,and cheddar cheese,
3) topped with minced meat stir fried until brown and cooked in tomato sauce with
-salt ,pepper
-one clove of garlic
-paprika
-onion powder or onions
4) then comes the third layer which is shredded mozzarella cheese.,salt and pepper.
5)bake until bubbling and golden on top.

Too good and of course a heart warming treat!

GHEE RICE AND CHICKEN SPICY ROAST



Ghee rice and Chicken curry is a match made in heaven.Though it can be a little heavy on the stomach,it is worth it and occasional indulgence can be forgiven;) .
It is not very difficult as it seems.. In fact a perfect meal in itself with some curd or salad, pappad and pickle as accompaniment.I like to have some curd mixed with chopped onions,tomatoes,salt and pepper
I have made some twists of my own. For cooking the rice,instead of using water to boil the rice ,i have used coconut milk and chicken stock.For the chicken curry i have used my own mix of Garam masala.

1)The rice of course has ghee(or clarified butter) in it.

-First step is to soak the basmathi or biriyani rice in water for minimum 15 minutes.
-I fried some onions till golden brown and some cashew nuts and kept aside.(raisins can also be included)
-then roasted some spices in ghee. ie- few whole cardomom, few cloves,star anice and a big cinnamon stick crushed .
-Dry roast the rice in the mixure with 3 to 4 table spoons of ghee
-I added half coconut milk and half chicken stock.The liquid should be double the amount of rice.
Taste and add in some salt to taste at this stage.
-Add in the rice when the mixture somes to a boil
-let it simmer for 10 minutes and keep it covered for half an hour.

Spoon out the rice in to the serving dish and to complete it top it up with the fried onions and Cashew nuts. Done:)

2) To make the Chicken Roast...

It is better to use medium sized chicken pieces instead of small pieces.i used one full cut chicken
a)Fry some
-one or two large red onions,after they are fired into a light brown colour add in
-a spoon of ginger garlic paste,
-one or two green chilli
- few curry leaves

b)when it's all come together add in
-one teaspoon Kashmiri chilli powder
-half teaspoon of turmeric powder,
-one and a half teaspoon of coriander powder,
-one and a half teaspoon of Gram masala.
-Once the spices are blended well and in one large chopped tomato.

c)To this mixture add in the chicken and roast it for a while and keep in covered for nearly 15-20 min stirring in between.
(Add salt, pepper and a teaspoon of vinegar(apple cider or coconut vineger)
at the stage where all the liquid  from the chicken comes out) and let it cook covered.
-After the chicken  is cooked, do not cover and let it simmer till the oil separates and the spice mix coats the chicken.

The most important point is not to add any water during the process of cooking.The chicken will cook covered in its own liquid and when it is all absorbed with the spices and extra water evaporated we get the unique taste and consistency.

-Top it up with some curry leaves and serve it hot!!

Pearl spot fish steamed in Banana leaf (Karimeen pollichathu)


This way of cooking this fish in banana leaf is a favorite delicacy in Kerala(India).A very healthy and yummy
way of cooking fish.

The fish can be made by directly steaming it with spices in banana leaves...
but i prefer to 
1)sear the marinated fish (chilly powder, turmeric powder,salt and pepper) in a pan to seal in the flavors and then wrap it in washed banana leaf, covering it with a mixture of chopped 
-onions,
-tomatoes,
-some ginger
-,green chilly,
-red chilly powder and coriander powder (its good to make the mixture in a little coconut oil to give it a good consistency).This mixture can also be sauteed in a pan.

2)Steam the fish in this mixture for 15 minutes in a steamer and its done...You can also use a foil instead of banana leaf and bake it in a medium oven for 15 minutes.

Hearty,juicy and spicy fish!!! A great side dish to steamed rice, appam or dosa.

BANANA LEAF


I was browsing through some folders of pictures taken few months back and see what i found..pictures of our Onam celebration!!!
Onam is a festival celebrated in Kerala by everyone regardess of any religion or caste.We manage to celebrate it every year no matter where we are.A meal like this is a main part of the celebration,and everyone takes part in cooking the meal.The dessert is not there in this picture.

South Indian cuisine is one of my favorites and i feel most healthy when i have a typical south Indian vegetarian meal ..On a normal daily basis the diet of a south indian consists one or more of these components.

Sambar curry(the gravy on the rice) is one of the dishes i like and know to cook well.To give an idea of the procedure involved in cooking it -

It is made by
-boiling red lentils(masoor dal),
-onion+vegetables like carrot,potatoes,cauliflower, ladies finger infact any combination of vegetables can be used.
-tomatoes
-Sambar powder(available ready made)
-salt till cooked properly.
-fry some mustard seeds and red dried chilli's in coconut oil or vegetable oil and mix in to complete the dish.

1) Cherries with cream and jelly-

Its my adaptation of the peach and cream recipe.
Instead of small pots ive used large bowl and also used the cherry liquid to color the jelly.The cream can be made with fresh cream ,milk,sugar and gelatin but i prefer to make it by boiling condensed milk and milk and gelatin.The rest of the procedure is similar to making the peach and cream recipe.
Looks pretty Christmas-ssyyy..huh ;) 

2)Stuffed Quails -

I stuffed each quail with a mixture of white bread+an egg+chicken stock+Chives+pepper and salt,after roasting it in the oven with butter, ive poured over a sauce made with flour,butter ,wine and chicken stock.The potatoes,carrots and corn were cooked along with it.

3)Braised pork rib with carrots and beets served along with mashed potato,topped with beans and tomato salsa.-

Sounds like hard work,but its very easy and worth all the effort.3 stages

a)Cook the pork ribs-
Brown some onions+add in carrots,beets and celery, a whole garlic crushed+wine+veg stock+pork ribs(coated with all purpose flour and browned on both sides) and ofcourse salt and pepper.the ribs should be immersed completely in the broth and cooked covered.I did not use the oven and braised it on the stove till the sauce reduced and the meat cooked to perfection.the unique brown color is due to the beets and wine.

b)Mashed potatoes-
I boiled the potatoes with skin on in salted water.Removed the skin and mashed it with roasted garlic in olive oil.add butter or cheese if required.

c)The beans and tomato salsa-
Blanch and stir fry the beans with salt,pepper and garlic.I like it with a lil bit of crunch,
boil the chopped tomatoes in oregano and thyme infused olive oil for 2 minutes only.

plate it up..Done:)


4)Almond macaroons.-

These are heavenly and my all time favorite.Whenever i make it its never enough.The most appealing part is its one of the easiest and tastiest recipes ive come across and i am grateful to Nigella Lawson for it. It is sure to bring a smile on anyone who eats it.
Just ground almond+white sugar+egg white and cardamom.mix,roll out into desired shape and bake it like cookies.too good to be true!

1)The bottom most is a family favorite..everybody literally attacks it..its my version of the chocolate cake with a gooey middle tht's available in Cilli's.Thts ice cream on top ,drizzed with my favorite homemade butterscotch sauce.Warm molten gooey cake+cold icecream and warm butter scotch syrup....killer combination...!!

2)Next is a simple mouth watering chocolate dessert which tastes alot like nutella.:)

3)Look carefully..and u can see a heart shaped cake...ive dusted with icing sugar to make the outline prominent..Its just a normal chocolate cake cut out in that shape with chocolate shavings.

Culinary creations









These are few pictures of my culinary creations...check it out...from bottom its.
1)Honey nut chicken.
Stir fry in oil until cooked
-one stalk spring onion
-one spoon grated ginger
-half a cup round cut-carrot
-half a cup celery
-two cups skinless chicken breast,cut into one inch strips
-1/4th cup cashew nuts
-one teaspoon salt and pepper.
Into that pour a mixture of
-half cup orange juice
-one spoon honey
-one spoon soy-sauce
-one spoon cornflour
Stir fry all together and adjust the seasoning as required.


2)Squid crisps with mayo and garlic dip.
Make a mixture of
-half a cup cornflour
-1/4th cup all purpose flour
-one teaspoon onion powder
-one teaspoon garlic powder
-one teaspoon kashmiri chilly powder(optional)
-one teaspoon salt and pepper.
Dip-1-2 cups of-squid cut into rings, in the mixture and deep fry in batches..until golden brown.Drain in paper towel and serve with mayo-garlic dip
-one cup mayonnaise
-2-3cloves of garlic-minced
-one spoon lemon juice( if u like it tangy)
-half a teaspoon salt(optional)
Mix altogether and serve! It's really good with just garlic too!

3)Beef in oyster sauce.
Cut one pound boneless beef (2 cups) into thin strips across the grain and marinate for 15-20 minutes, in a mixture of
-one spoon soy sauce
-one spoon Chinese rice wine.
-one spoon oil
-two spoons of cornflour.
-half a teaspoon salt and pepper
Deep fry the beef in batches and set aside.( you can also stir fry until cooked )
Stir fry together
-one stalk of spring onion
-one spoon grated ginger and garlic
-one red capsicum cut into strips.(u can add any vegetable like mushroom,carrot,cabbage or a mixture)
Add in the fried beef with a mixture of
-1/2 cup chicken broth(add in more stock if u need more sauce )
-1/4th cup oyster sauce.
-one teaspoon cornflour
-stir together and break in one egg(optional)
Once the sauce thickens,adjust seasoning and Serve!

4)Pumpkin cake.
Sift together the dry ingredients and keep aside.
-one cup flour
-one and a half teaspoon baking powder
-half a teaspoon salt
-one teaspoon cinnamon powder
In another bowl,beat together
-half a cup of butter or half a cup of vegetable oil
-two drops of vanilla essence
-2 cups of pureed pumkin
-2 eggs
-half a cup of condensed milk or half cup of sugar.
Add in the dry ingredients into this mixture with
-half a cup of cashew nut and mix all together.
Bake in 350 Degree F or 180 degree C for 20-30 minutes.

5)Chicken pattie (extra big) made into a b'day cake.
Stir fry together
-half a cup of chopped bacon
-half a cup of minced carrot
-half a cup of minced cabbage
-half a cup of minced spinach leaves
-one teaspoon onion power or one onion minced.
-half a teaspoon garlic powder or two garlic cloves minced.
-half a teaspoon salt and pepper.
In a separate bowl
-Sift in one cup of all purpose flour and one teaspoon baking powder
-One and a half cup minced chicken or shreded left over chicken
-One piece of bread soaked in two spoons of milk
-two eggs
-one spoon tomato ketchup.
-one spoon of grated Parmesan cheese..
-half a teaspoon salt and pepper.
Mix all together,Mould it into desired shape and bake in preheated 375 degree F or 190 degree C oven for 20 to 30 minutes.After cooling i pipped in Mayonnaise and to decorate the Chicken pattie.


6)Cabbage roll with minced chicken filling.
First step is to
- pull out the cabbage leaves without damaging them and
-Blanch it for 2-3 minutes in salted.boiling water.Keep aside.
Next is the filling.Saute
-One minced onion with one cube butter
-One cup diced mushrooms
-two cloves of grated garlic
-half a cup diced tomatoes
In a bowl combine
-One cup of minced Chicken
-One egg
-1/2 cup cooked white rice
-One spoon tomato ketchup
-One spoon Worcestershire sauce
-One teaspoon salt and pepper.
Mix all together.
Fill each cabbage leaf with the mixture,roll it and secure each roll with a wooden tooth pick and
bake in a preheated 350 degree F or 180 degree C for 30-40  minutes.

7)Fruit custard made with indian flavors.
Making custard with custard powder is an easy and tasty way..this recipe is egg fee and tasty.
Boil together
-2 and a half cups of milk (half a litre of milk)
-One cup of condensed milk(condensed milk sweetens the custard.if needed add more sugar)
- 3-4 cardamom pods crushed and skin removed.
keep stirring until it is reduced a bit
-add in -two spoons of cornflour.
Once it is thick enough,keep aside.
Prepare the fruit mixture-
-Half a cup of pomegranate
-Half a cup of apple
-half a cup of pear
-half a cup of banana.
-Mix all together.Layer the custard and fruit in a tall glass ,
-Garnish with crushed almonds and SERVE CHILLED!!

8)A pudding-cake version of bread pudding with crispy corn flakes covering.
This recipie is so easy that you can just mix all togther with your hands and bake it.
-Discard the crust of one loaf of bread and soak the bread in milk
-Add half a cup of butter to the bread
Add in
- half a cup of all purpose flour
-1/2 cup of sugar
-one egg
-One teaspoon baking power
-half teaspoon salt
-one teaspoon cinnamon powder
-2-3 drops of vanilla essence
-half cup raisins soaked in rum
Mix all together and bake in preheated a 350 degree F or 180 degree C oven for 30-40 minutes.
Sprinkle with crushed cornflakes on top to get that extra crunch!(optional)

EGG ROLLS




Crispy golden rolls with delicious filling...dipped in spicy-sweet thai sauce...ahh! Even the thought of it is definitely mouth watering..!!!! I din't miss out to take a pic, since i was very proud with the EGG-ROLLS i made.Looks good doesn't it?:)
It does require some patience to make it...but the end result makes you feel like a celebrity chef(or at least near ;-))

To give an idea about it.."EGG ROLLS" doesn't mean it has only egg and some vegetables as the filling(that's what i always thought until i tried making it).It is an interesting blend of many ingredients that make it quite appetizing.
Egg rolls are the heftier cousins of Spring rolls.The only difficulty as such ,would be the process of rolling it and frying it to perfection without burning it or under cooking it.

There are many versions with ingredients like bean sprouts,rice noodles,mushrooms,beef,pork.eggs etc..
In my version i have used just some common ingredients.ill explain the procedure..keeping it as short as possible.

1)first make the filling-

- Stir fry some minced chicken with some onion,oyster sauce, soy sauce.keep aside.

-next stir fry some diced onions,crushed garlic or garlic powder,then add in some shredded cabbage,carrot add some pepper,salt, soy sauce,some vegetable vinegar if you don't have rice wine.
-Mix in the meat mixture and check for seasoning.

2)Once the mixture has cooled down a bit,start filling it inside the egg roll dough.

Buy some ready made egg roll wrappers(its a wheat based dough which is heavier than the rice based used for spring rolls).It would be square or rectangle sheets of dough,which are available in packets.
One very important tip is once you open the packet keep the dough sheet covered with a towel so that it doesn't dry out.

4)To form the rolls.
-make some egg wash with an egg and some milk or water.apply it on all the four sides.You can also use some cornflour and water if you don't have eggs at home.

-place the sheet with a pointed side towards you, place some filling near the bottom corner and fold it off like an envelop,the bottom fold first, then the side folds.
Roll it and seal it off at the last edge with some more egg wash.

5)Deep fry the egg rolls till golden brown and drain it into a paper towel.

6) I served it with some sweet and spicy Thai sauce...cream cheese with some spring onion works well too..

Tempting, Delicious, gorgeously presentable and worth all the effort....

Layerd Icecream cake with butterscotch sauce.


Tastes like icecream ,but in the form of a cake with layers..guess what?
yup..ICECREAM CAKE!:)
Who doesn't like ice-cream...and who doesn't like cake?If you can get both as ur birthday cake or as part of a celebration? yum! right.

Well...the best part about this cake is, you can customize the layers according to the person's or family's liking and no baking involved.. obviously,its icecream!
It is definitely worth all the effort..specially coz it looks and tastes like the way you want :)

Just make sure you get all the ingredients before hand.There are many celebrities in this recipe
my favorite would be the Butter scotch sauce;-)...I like calling it my dessert queen!

The butterscotch sauce tastes simply beyond words and almost everyone would like its flavor.It has become one of my trade marks coz i use it with anything and everything.
It can be used as a fondue dip,with fruits as dipping, with plain cakes, mashmellows, biscuits, icecream , even drizzle it over a milk shake, custard or even on plain bread..the options are endless....

To make it,
1)Just heat some butter,golden syrup,white sugar and brown sugar

2)When its all melted and mixed together add in the fresh cream.

3)Once its merged and bubbling away,add some vanilla essence.

4)Transfer it to another bowl and let it cool down.

Golden syrup and brown sugar is available in most of the supermarkets..once i made it without the golden syrup.Its was not bad though. i guess its the brown sugar and vanilla essence that makes all the difference.

To make the icecream cake,its important to get a SPRINGFORM PAN. It comes in small,medium and large sizes.It is like a cake tin which has a separate-able base,which can be removed by loosening the clutch it has on the sides.It can be very useful in baking cakes or even puddings.

So to make the cake,
1)Get a sponge cake base or you can even used crushed cookies mixed with butter and press to the base of the spring-form pan to make the base of the cake.

2)add a layer of your favorite icecream..plain vanilla will do fine.I used praline and cream.

3)next layer would be some oreo cookies or nuts or fruits or even another layer of sponge cake or chocolate cake.

4)Another layer of icecream, a diffrent flavor or the same one.

5)I topped it up with some cut peaches and a pine apple ring in the middle.(u can top it up with crushed oreo cookies or chocolate shavings.)

6)Its important to work fast since we are dealing with icecream and keep it to set in the fridge.

7)Loosen the clamp and transfer the cake to a cake stand with or without the cake tin base.
An important tip is to line the cake tin with some cling film,so that it doesn't stick to the sides and you can detach it out without much difficulty.

Lastly i drizzled it with some warmed butter scotch syrup just before cutting the cake(u can substitute with chocolate syrup too).
PURE BLISS INDEED!!!!!!

Pear in spicy wine bath....


Have you been in a situation where u had to cook up a dessert almost instantly and impress a guest who turned up unannounced? Well,...i like similar situations coz..it puts me under pressure,which is good sometimes;) and i end up making something from the ingredients present at home.

PEAR IN SPICY WINE BATH..was a revelation..and a savior in a situation like that.I got the idea from the internet of-course..along with my special touch;) it was a huge hit.

The simplicity of this dessert is surprising yet has an exotic complexity.
Its low fat,no butter,milk or eggs,..
just fruity, spicy-sweet and lil intoxicating may be;)

I do not know the exact measurements...an idea with my cooking instincts is usually a success.

So,to give you an idea...
1)make the spicy wine bath,by boiling some good quality red wine
2) some sugar(i prefer the brown one),
3)some spices like clove,star anise,pepper,cinnamon stick or cinnamon powder.
4)add the pear halves in to the boiling spicy wine bath
5)boil till the wine thickens and becomes like syrup.
6) The pears will become soft and brown.

Serve it hot with the wine syrup.I missed out to take a pic in the serving dish but i have the picture which i took in the boiling stage.It shows how the pears turned golden and heavenly....
